Days of summer...

As summer progresses, it's always warm and humid, so it's easier to stick with salads, veggies and fish.
For dinner this pan fried sea scallops with baked paprika cream is really healthy & tasty:


Recipe:
In a medium pan cook sliced yellow California peppers with some salt and fresh ground pepper. When it starting to brown on the edges, add some heavy cream and stir for 2-3 minutes. Set aside.
In a little olive oil bake the scallops 3-4 minutes each side. In a blender, blend the peppers until smooth and creamy, then add some chopped cilantro. Place a small amount of this mix on a plate then put the scallops on the cream and serve with risotto, steamed veggies or a salad.
